Roll Mix Vanilla, 10kg

 Roll Mix Vanilla is a powder product, with the following advantages:

  • swiss roll leaves have a fine structure, and the cake doughs have dense core, very fine, with even porosity and very good capacity of syrup absoption;
  • the edges remain straight whet cutted;
  • swiss rolls leaves are stretchy and roll up wery well;
  • provides to the final product a special taste of chocolate, freshness and good stability.

Recommended recipe: 1 kg of Roll Mix Choco, 0.8 kg of eggs (16 pieces).

Working procedure: Blend all the ingredients for 1 min at low speed, then mix for 4 – 6 min at high speed until the mixture dubles its volume. For Swiss roll leaves, for a 40 x 60 cm pan it is required 0.5 kg of mixture to be spreaded evenly. The baking is set at 235-250°C, in a ventilated oven, for 4 – 5 min, depending on the weight and loading rate of the oven. For cake doughs, it is required to dose evenly ½ of pans capacity. The baking is set at 180°C, in a ventilated oven, for 35 – 40 min, depending on the weight and loading rate of the oven.
