Super Cake, 10 kg sack
Super Cake is a premix for simple cakes, doughs for fruit tarts and other cookies with wet and dense core, with the following advantages:
- the blend tolerates cocoa adding or other ingredients for special cakes (nutmeat, pieces of chocolate, dry fruits);
- provides the final product a very good taste, wet and stretchy core with even porosity and long-time freshness;
- cakes have a very good volume.
Recipe with powder egg: 0.1 kg of Premix Super Cake; 0.45 kg of flour; 0.45 kg sugar; 0.11 kg of powder egg; 0.44 L of water; 0.25 L of oil.
Recipe with fresh eggs: 0.1 kg of Premix Super Cake; 0.45 kg of flour; 0.45 kg of sugar; 0.45 kg fresh eggs (8 pieces); 0.1 L of water; 0.25 L of oil.
Working procedure: in the pastry blender, add all the ingredients and mix at medium to high speed for 3 min;
Type 1: in order to get a white cake, the mixture is poured into pans (about ½ from pans capacity).
Type 2: in order to get a 600 g marble cake, the mixture is divided into 2 equal parts, one of them being mixed with 50 g of cocoa. The cocoa mixture is being evenly poured over the simple one, then take a spoon and cross gently from one part to the other, in order to get a marbled texture. The baking is set to low temperatures (160 – 180°C), for 45 – 50 min, depending on the weight, oven’s type and loading rate.
